Alternatively, you can keep the service active but disable "online booking", allowing customers to contact you directly for bookings via phone or other means.
Draft- When a service is marked as a draft, it means that it is still in the process of being created or edited. Draft services are not visible to customers on your storefront, ensuring that unfinished or incomplete services do not appear publicly.
Active but not available for online booking -When a service is marked as active but not available for online booking, it means the service won't be visible on your storefront for direct booking. Instead, you can handle bookings manually internally or provide a service URL for customers to book manually. This allows for customised and controlled booking processes.
This can be done by making your service "active" and disabling the checkbox and a storefront which says "Customers can purchase this online".

Can be sold online vs. Cannot be sold online
Can be sold online- When you enable the option "Customers can purchase this online" for a service, it means that customers have the ability to book and purchase that particular service directly through your online storefront. This feature allows customers to select the service, choose available dates or times, and complete the booking process entirely online.
Note- When a service is set to be sold online, you gain the ability to add an intake form, set scheduling conditions, and perform other customisations to enhance the booking process.
Cannot be sold online- On the other hand, if you choose to disable the "Customers can purchase this online" option for a service, it means that the service will also not be visible on your storefront and customers cannot book or purchase that particular service directly through your online storefront.
